The solvation of sugars in aqueous media matters the understanding biological systems and carbohydrate transformations. presence NaCl is known to perturb hydrogen bonding sugar hydrates, however, direct evidence elucidate mechanism at atom level very rare even though “NaCl Effect” was well biomass transformations for chemicals/biofuels. Here we report experimental evidences a clear staircase-like correlation between induced 1H NMR changes D-glucose/fructose with concentration solution room temperature; two stable status observed system. HDO sugar/NaCl as “dynamic” reference key enable decoupling global salt effect this investigation NaCl-saccharide interaction. Via further half-quantitative study, three structures sugar-NaCl-water complexes were mapped first time tackling NaCl-monosaccharide interaction atomic an solution. Based on maximum shifts, ideal usage proposed.
